I feel obliged to say poo. I miss the poo! I miss throwing it, I miss filling boxes with it. It is the poo I miss the most.
I also miss spider zombies, smell counted when holding meat, and constantly combining weapons to get the highest level. Would carry a workbench on raids just so I could combine everything on site. Doing the quick math to find the most efficient way to get a level 6 from what you had.
To some extent I miss looting dead zombies. It was tedious, but you knew you could get a hoe from big momma when you needed one. I think that's what she dropped usually.
I miss the football players. The OMFG early game running at you in the daytime....always got me.

CSMM has those options and is very good.
Alloc is part of TFP team so I'd think the official 7DTD Discord would be as good as any. I'm not aware of a personal Discord for him.

It's not exactly that, and I like your idea, but I think I read they have / will have a quest for a POI that is overrun, so it's a clear but on steroids.
But with your idea you could load up with supplies, activate the quest at noon and have 10 game hours to prepare, but you can't forget anything...because you can't leave. I'd +1 that

It was a one off POI that one of them made. They later said it was the one and only time they'd do that in 7DTD. There was some place that you could download all their worlds when they were done. I can't remember for the life of me where it was, but I played on the lighthouse world for kicks and giggles.

I did notice it oddly not too long ago. Was still used to cans of water could be boiled without a pot, but jars only with a pot. Gotta read those release notes and not just do what you "know"

Someone somewhere a few years ago had a mod that created self spreading fire maybe circa A18 or earlier. I'm sure someone remembers

Just curious if you know if server side mods will work with console? I assume client side / overhaul won't.
